    As a rule, we generally stick to ales, as our one attempt at a lager produced bottles of what was more akin to chemical weaponry than a palatable beverage. Our batches don’t usually exceed 10 gallons in volume, or 10 percent in alcohol content. Until very recently, we made no record whatsoever of ingredients or techniques, and so you’ll have to take me for my word when I say that we have successfully brewed:
